Innovations in Traditional Foods Take Center Stage at 6th KNUST Food Festival

In a concerted effort to address hunger challenges and fortify the nation’s tourism sector, the Kwame Nkrumah University of Science and Technology (KNUST) is set to unveil groundbreaking innovations in traditional Ghanaian foods at the 6th edition of the KNUST Food Festival. The event, themed “Innovations and Technological Advances in Traditional Foods: The Role of Academia and Industry,” will take place at the Royal Parade Grounds.

A member of the festival’s planning committee, Dr. Abena Boakye, stressed the global significance of showcasing the innovations, inventions, and technological strides achieved in the realm of traditional Ghanaian foods. “In an era where every culture is exploiting their traditional foods for nutrition and food tourism, it’s important that KNUST showcase to the world what we’ve done,” she emphasized.

Another committee member, Dr. Eric Owusu Mensah, underscored the pivotal role of these food innovations in enhancing food value and contributing to Ghana’s GDP. The Registrar of KNUST, Mr. Andrews Kwasi Boateng, highlighted the festival’s alignment with national goals, particularly supporting efforts to achieve Sustainable Development Goals (SDGs) 2 and 3, targeting zero hunger and overall well-being.

Scheduled for February 16th, this year’s Food Festival promises to be a comprehensive display of innovations from all six colleges of the university. The festival coordinator for the College of Engineering, Mrs. Emmanuella Kwao Boateng, hinted at exciting displays, including apps and machines designed to boost food production and utilization.

Another committee member, Dr. John-Lewis Zinia Zaukuu, outlined the diverse activities planned for the event, including a food bazaar, cooking competitions, and food innovation displays, among others, to keep visitors entertained throughout the festival.
